Soft Chocolate Chip Lunchbox Cookies: 5-Step Snack

  • Author: Liliana
  • Total Time: 25 minutes
  • Yield: 24 cookies 1x

Description

A reliable, soft, and chewy chocolate chip cookie recipe designed to survive the lunchbox journey without crumbling or going stale. Perfect for back-to-school snacks or any time you need a quick, crowd-pleasing treat.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 ½ cups (300g) dark brown sugar
  • ½ cup (100g) granulated white sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (170g) chocolate chunks

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together until light, fluffy, and combined (about 2-3 minutes).
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract until just combined.
  5. Add the dry ingredients to the wet ingredients and mix on low speed or by hand until just combined. Do not overmix.
  6. Fold in the chocolate chips and chocolate chunks by hand until evenly distributed.
  7. Scoop dough into balls (about 2 tablespoons each) and place on prepared baking sheets. For best results, chill dough for 30 minutes.
  8. Bake for 10-12 minutes, or until edges are golden brown but centers are still soft and slightly underdone.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  10. Store in an airtight container at room temperature for up to 5 days.

Notes

Ensure butter is softened, not melted, to prevent flat cookies. Do not overbake; cookies will firm up as they cool. For extra softness, store with a slice of bread in the airtight container. Dough can be frozen for up to 3 months.
