  • 1 cup (150g) blueberries
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Preheat oven to 325°F (160°C). Lightly grease the bottom of a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, 2 tablespoons sugar, and salt. Stir in melted butter until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom of the pan. Bake for 8 minutes, then remove and let cool. Leave oven on.
  4. In a large bowl, beat cream cheese on medium-low speed for 3-4 minutes until completely smooth and lump-free. Scrape down sides frequently.
