These savory, high-protein veggie breakfast burritos are ready in just 15 minutes. Packed with eggs, black beans, and fresh vegetables, they are customizable, freezer-friendly, and perfect for busy mornings.

- 6 large eggs
- 1 can (15 oz / 425g) black beans, rinsed and drained
- 2 medium bell peppers, diced (about 300g)
- 1 medium yellow onion, diced (about 150g)
- 2 cups fresh spinach (about 60g)
- 1 cup shredded cheddar or Mexican blend cheese (about 100g)
- 1 ripe avocado, sliced
- 8 large flour tortillas (10-inch / 25cm)
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Salsa for serving (optional)
Instructions
- Prep ingredients: Dice onions and peppers, mince garlic, rinse beans, and grate cheese.
- Heat olive oil in a large skillet over medium heat. Add diced onions and peppers; cook for 3-4 minutes until softened.
- Add minced garlic and cook for 30 seconds. Stir in cumin and chili powder; cook for 30 seconds to toast spices.
- Add rinsed black beans and cook for 2 minutes. Add spinach and stir until wilted (about 1 minute). Remove from heat and transfer mixture to a bowl.
- In the same skillet, scramble eggs over medium-low heat until slightly soft. Season with salt and pepper.
- Warm tortillas in the microwave for 20 seconds or in a dry skillet for 30 seconds per side.
- Lay a tortilla flat. Spoon veggie-bean mixture down the center, top with scrambled eggs and cheese. Add avocado slices if using.
- Fold the sides of the tortilla in and roll up tightly from the bottom.
- Serve immediately or wrap in foil for freezing.
Notes
Warm tortillas before rolling to prevent tearing. Rinse beans thoroughly to remove metallic taste. Cook eggs low and slow to keep them creamy. For freezing, wrap tightly in foil and store for up to 2 months. Reheat in microwave for 1-2 minutes.
