Ingredients

  • 1/2 cup heavy whipping cream (cold)
  • 2 tablespoons pumpkin purée (not pie filling)
  • 1/2 teaspoon pumpkin pie spice
  • 2 tablespoons granulated white sugar
  • 1/2 teaspoon vanilla extract
  • Ice
  • Cold brew or chilled strong coffee
  • Pinch of sea salt (optional)

Instructions

  1. Chill your measuring pitcher and frother in the freezer for 5 minutes if possible.
  2. Pour the cold heavy whipping cream into the chilled pitcher.
  3. Add the pumpkin purée, pumpkin pie spice, sugar, and vanilla extract.
  4. Whisk gently to combine ingredients until uniform; do not start whipping yet.
  5. Using an electric frother held at an angle just below the surface, whip the mixture for 2-3 minutes until it forms soft peaks and resembles thick, pourable yogurt.
  6. Alternatively, use a French press by pumping the plunger up and down 20-30 times until thick and airy.
  7. Fill a glass with ice and pour cold brew or chilled coffee over it, leaving an inch of space at the top.
  8. Spoon or pour the pumpkin cream foam over the back of a spoon onto the coffee to create distinct layers.
  9. Garnish with a tiny pinch of extra pumpkin pie spice and serve immediately.

Notes

Keep all ingredients and tools cold to ensure the cream whips properly and the foam stays distinct. Do not use pumpkin pie filling as it contains added sugars and spices that will alter the texture and sweetness. The foam does not store well and should be made fresh. For a dairy-free version, use chilled full-fat coconut cream.
