Ingredients

  • 23 lbs large shrimp, peeled and deveined
  • 12 lbs crab legs (snow crab clusters or lump crab meat)
  • 1 lb Andouille sausage, sliced into thick coins
  • 2 lbs red potatoes, halved
  • 4 ears corn on the cob, cut into 34 pieces
  • 2 medium whole onions, peeled
  • 1 whole head garlic, top cut off
  • 34 tablespoons Cajun seasoning
  • 1 bottle (12 oz) light lager or pilsner beer
  • 1 stick (½ cup) unsalted butter
  • 2 lemons, sliced

Instructions

  1. Prep all ingredients: peel/devein shrimp, slice sausage, cut corn, halve potatoes, peel onions, cut lemons, and mince half the garlic.
  2. Fill a large stockpot with 3-4 gallons of water. Add beer, 2 tablespoons Cajun seasoning, and whole onions. Bring to a rolling boil.
  3. Add potatoes to the boiling water and cook for 10 minutes.
  4. Add corn pieces and sliced Andouille sausage to the pot. Boil for another 5 minutes.
  5. Add shrimp, crab legs, whole head of garlic, and lemon halves. Reduce heat to a gentle simmer.
  6. Simmer for 3-5 minutes until shrimp are pink and opaque. Do not overcook.
  7. Turn off heat. Stir in the stick of butter and remaining 1-2 tablespoons of Cajun seasoning until melted.
  8. Drain the contents using a colander or basket.
  9. Dump onto a serving tray or newspaper-covered table. Squeeze roasted garlic cloves from the head into the mix.
  10. Serve immediately with extra lemon wedges and melted butter dip.

Notes

Do not overcook the shrimp; they should be pink and opaque. Taste the water before adding shrimp; it should be salty. For a vegetarian version, skip the meat and double the veggies. Leftovers can be stored in the fridge for up to 2 days but do not freeze.
