  • 1 can (15oz / 425g) black beans, rinsed and drained
  • 1 cup (150g) frozen corn, thawed
  • 1 cup (240g) medium salsa
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • ½ cup chopped fresh cilantro (about 15g)
  • 1 medium avocado, diced (optional)
  • Salt and pepper to taste

Instructions

  1. Shred the rotisserie chicken using two forks, discarding skin and bones. Set aside.
  2. Rinse the black beans under cold water in a colander until the foam stops forming, then drain well.
  3. In a small bowl or jar, whisk together the lime juice, olive oil, salt, and pepper until emulsified.
  4. In a large mixing bowl, combine the shredded chicken, rinsed black beans, and corn. Toss gently to distribute evenly.
  5. Add the salsa and chopped cilantro to the bowl. Toss again to coat the ingredients.
  6. Pour the dressing over the salad and toss gently until everything is coated.
  7. Fold in the diced avocado right before serving to prevent browning.
  8. Taste and adjust salt or lime juice if needed. Serve immediately or store in the refrigerator.
