  • 3/4 cup (150g) granulated white sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon (5ml) pure vanilla extract
  • 1/2 cup (120g) pure pumpkin puree
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (3g) fine sea salt
  • 1 teaspoon (2g) ground cinnamon
  • 1/2 teaspoon (1g) ground nutmeg
  • 1/4 teaspoon (0.5g) ground ginger
  • 1/4 teaspoon (0.5g) ground cloves
  • 1 cup (170g) semi-sweet chocolate chips
  • Hickory or Applewood wood pellets

Instructions

  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  2. Add the egg and vanilla extract to the butter mixture and mix until combined.
  3. Stir in the pumpkin puree until incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips by hand. If the dough is sticky, refrigerate for 30 minutes.
  7. Preheat your smoker to 225°F (107°C) using hickory or applewood pellets.
  8. Place a cookie sheet or pizza stone on the smoker grate.
  9. Scoop tablespoon-sized balls of dough onto the sheet, leaving 2 inches between them.
  10. Smoke the cookies for 12-15 minutes until edges are set and lightly golden, but centers still look slightly underbaked.
  11. Remove from smoker and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for at least 30 minutes before smoking to prevent excessive spreading. Do not over-smoke as it can make the flavor bitter. For best texture, ensure the dough is cold when placed on the hot smoker grate. You can substitute applewood for a sweeter smoke profile.
