- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated white sugar
- 1/2 cup (100g) packed light brown sugar
- 1 large egg, room temperature
- 1 teaspoon (5ml) pure vanilla extract
- 1/2 cup (120g) pure pumpkin puree
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) fine sea salt
- 1 teaspoon (2g) ground cinnamon
- 1/2 teaspoon (1g) ground nutmeg
- 1/4 teaspoon (0.5g) ground ginger
- 1/4 teaspoon (0.5g) ground cloves
- 1 cup (170g) semi-sweet chocolate chips
- Hickory or Applewood wood pellets
Instructions
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter mixture and mix until combined.
- Stir in the pumpkin puree until incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
- Fold in the chocolate chips by hand. If the dough is sticky, refrigerate for 30 minutes.
- Preheat your smoker to 225°F (107°C) using hickory or applewood pellets.
- Place a cookie sheet or pizza stone on the smoker grate.
- Scoop tablespoon-sized balls of dough onto the sheet, leaving 2 inches between them.
- Smoke the cookies for 12-15 minutes until edges are set and lightly golden, but centers still look slightly underbaked.
- Remove from smoker and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for at least 30 minutes before smoking to prevent excessive spreading. Do not over-smoke as it can make the flavor bitter. For best texture, ensure the dough is cold when placed on the hot smoker grate. You can substitute applewood for a sweeter smoke profile.
