Description
An easy, forgiving weeknight dinner using rotisserie chicken and BBQ sauce in a slow cooker. This set-it-and-forget-it meal is budget-friendly, customizable, and perfect for busy families.
Ingredients
- 2 medium rotisserie chickens (about 3 lbs / 1.4 kg), skin and bones removed
- 1.5 cups (360ml) BBQ sauce
- 2 tablespoons (30ml) apple cider vinegar
- 1 tablespoon (15g) brown sugar (optional)
- 1 teaspoon (5g) garlic powder
- 1 teaspoon (2g) smoked paprika
- 1 teaspoon (2g) onion powder
- Salt and black pepper to taste
- 8–10 burger buns (brioche recommended)
- Coleslaw (optional)
- Pickle chips
Instructions
- Remove skin and bones from rotisserie chickens. Tear meat into large chunks.
- In a medium bowl, whisk together BBQ sauce, apple cider vinegar, brown sugar, garlic powder, smoked paprika, onion powder, salt, and pepper. Taste and adjust seasoning.
- Place chicken chunks into a 6-quart slow cooker. Pour sauce over chicken and stir to coat evenly.
- Cover and cook on High for 2-3 hours or on Low for 4-5 hours. Do not exceed 6 hours to prevent mushy texture.
- Shred chicken using two forks directly in the pot or after removing. Stir back into the sauce and let sit for 5 minutes to reabsorb juices.
- Toast buns lightly. Pile shredded chicken onto bottom buns. Top with coleslaw and pickle chips if desired. Serve immediately.
