  • 4 cups low-sodium chicken broth
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups chunky salsa (medium or hot)
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 packet taco seasoning (about 28g)
  • 1 can (15oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tablespoons fresh lime juice
  • 2 ripe avocados, diced (for topping)
  • 1 cup shredded cheese (Monterey Jack, Cheddar, or Mexican blend)
  • Tortilla chips, crushed (for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Dice the onion and mince the garlic.
  2. Add the onion, garlic, chicken, broth, salsa, cumin, chili powder, taco seasoning, black beans, and corn to the slow cooker.
  3. Stir all ingredients together to combine.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  5. Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
  6. Return the shredded chicken to the soup.
  7. Stir in fresh lime juice and taste for seasoning, adding more salt or lime if needed.
  8. Serve hot, topped with shredded cheese, diced avocado, crushed tortilla chips, and cilantro.

Notes

For a thicker soup, let it cook uncovered for the last 30 minutes or mash some beans. For a thinner soup, add extra broth. If using rotisserie chicken, add it during the last hour of cooking to prevent it from disintegrating. Fresh lime juice is essential for brightness; avoid bottled juice. This soup freezes well for up to 3 months, but add dairy toppings after reheating.
