A quick and easy 30-minute weeknight dinner featuring tender chicken thighs and roasted vegetables on a single sheet pan, seasoned with bright lemon and fresh herbs.

- 1.5 pounds boneless, skinless chicken thighs
- 1 pound small red potatoes, halved
- 1 medium red onion, sliced into wedges
- 1 cup cherry tomatoes
- 2 sprigs fresh rosemary
- 1 sprig fresh thyme
- 3 tablespoons extra virgin olive oil
- 2 large lemons (1 juiced, 1 sliced)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Pat chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a small bowl, whisk together olive oil, juice of one lemon, minced garlic, dried oregano, and red pepper flakes.
- Place chicken, potatoes, onion, and tomatoes on the baking sheet. Drizzle with marinade and toss to coat evenly, ensuring ingredients are in a single layer.
- Distribute lemon slices over the chicken and veggies, and tuck rosemary and thyme sprigs in between pieces.
- Roast for 20-25 minutes, flipping chicken and stirring veggies halfway through, until chicken reaches 165°F internally.
- Optional: Broil for 2-3 minutes to crisp the chicken skin and char potato edges.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Pat chicken dry before seasoning to ensure browning rather than steaming. Do not crowd the pan to allow proper roasting. Use a meat thermometer to ensure chicken reaches 165°F. Leftovers can be stored in the fridge for up to 4 days but do not freeze well as potatoes become mushy.
