Ingredients
- 2 large Yukon Gold potatoes (about 500g), diced into 1/2-inch cubes
- 1 pound (450g) breakfast sausage (mild or spicy Italian), casings removed
- 1 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 6 large eggs
- 1 cup (100g) sharp cheddar cheese, shredded
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Pinch of paprika (optional, for potatoes)
- 2 cups fresh spinach (optional)
- 1/2 cup cooked bacon bits (optional)
Instructions
- Dice the potatoes into uniform 1/2-inch cubes. Toss them in a bowl with olive oil, salt, pepper, and a pinch of paprika.
- Heat a 12-inch cast iron skillet over medium-high heat. Add the sausage meat, breaking it up with a spoon. Cook until browned and no longer pink (5-7 minutes). Remove sausage with a slotted spoon, leaving about a tablespoon of grease in the pan.
- In the same skillet with the sausage grease, sauté the diced onions and bell peppers for 3-4 minutes until softened. If using spinach, add it now to wilt. Stir the cooked sausage back into the pan.
- Push the mixture to the side or spread evenly. Add the seasoned potatoes to the pan, pressing them down slightly. Cook for 5-7 minutes, stirring occasionally, until potatoes are golden and crispy.
- Create small wells in the hash mixture using the back of a spoon. Crack one egg into each well. Sprinkle shredded cheese over the entire hash.
- Transfer the skillet to a preheated oven at 400°F (200°C). Bake for 8-10 minutes until egg whites are set but yolks are still slightly runny.
- Remove from oven and let cool for 2-3 minutes. Sprinkle with fresh parsley and serve directly from the skillet.
Notes
For extra crispy potatoes, ensure the pan is hot and do not rush the browning step. If using lean turkey sausage, add a tablespoon of olive oil. This recipe is naturally gluten-free if you check your sausage label for fillers. For a vegetarian version, swap sausage for mushrooms or tofu. Do not freeze leftovers as eggs become watery when thawed.
