  • ½ teaspoon salt
  • ½ cup (120ml) heavy cream, warmed
  • 1 cup (200g) granulated sugar (for caramel)
  • ¼ cup (55g) unsalted butter (for caramel)
  • 1 teaspoon flaky sea salt (for caramel and topping)
  • 2 tablespoons water (for caramel)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Lightly grease the parchment.
  2. Chop chocolate into small pieces. Place chocolate and ½ cup butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth. Alternatively, melt using a double boiler. Set aside to cool slightly.
  3. In a large bowl, whisk 3 eggs, 1 cup granulated sugar, and 1 cup brown sugar vigorously for about 2 minutes until pale and glossy.
  4. Pour the melted chocolate and butter mixture into the egg mixture. Stir gently with a spatula until combined. Add vanilla extract.
  5. Sift ¾ cup flour, 2 tablespoons cocoa powder, and ½ teaspoon salt over the batter. Gently fold in until no streaks of flour remain. Do not overmix.
