Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana (half mashed, half sliced)
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup (optional)
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Extra banana slices for topping
  • Extra peanut butter for drizzle (optional)
  • Granola for topping (optional)

Instructions

  1. Mash half of the ripe banana thoroughly with a fork until it is almost a puree.
  2. In a mason jar or container, combine the mashed banana, rolled oats, chia seeds, cinnamon, salt, and maple syrup (if using). Stir to distribute dry ingredients evenly.
  3. Pour in the milk and add the 2 tablespoons of peanut butter. Stir vigorously until the peanut butter is mostly incorporated.
  4. Secure the lid on the jar and shake well to mix.
  5. Refrigerate for at least 4 hours, preferably overnight (8 hours).
  6. While oats are soaking, slice the remaining half of the banana.
  7. When ready to eat, stir the oats. If too thick, add a splash of milk.
  8. Top with fresh banana slices and an extra drizzle of peanut butter if desired.
  9. Serve cold or microwave for 30-60 seconds for warm oats.

Notes

Use ripe bananas with brown spots for natural sweetness. Do not use instant oats as they turn mushy; steel-cut oats stay too hard. Old-fashioned rolled oats are required. Chia seeds are optional but recommended for thickness. Store in the coldest part of the fridge, not the door. These do not freeze well.
