Instructions
- Freeze flank steak for 20 minutes to firm it up, then slice against the grain into thin strips.
- Toss beef strips with 2 tablespoons soy sauce and 1 teaspoon cornstarch. Let marinate while prepping other ingredients.
- In a small bowl, whisk together 1/2 cup soy sauce, 1/4 cup chicken broth, 2 tablespoons brown sugar, 4 cloves minced garlic, 1 tablespoon minced ginger, 1 teaspoon cornstarch, and 1 tablespoon sesame oil until smooth.
- Heat 1 tablespoon oil in a large skillet or wok over high heat until smoking hot.
- Sear beef in a single layer (in batches if necessary) for 1-2 minutes per side until browned. Remove beef to a plate.
- Add another tablespoon of oil to the same skillet. Add carrots and broccoli, stir-frying for 2-3 minutes until they begin to soften.
- Add bell peppers and cook for another 1-2 minutes.
- Return beef to the pan with the vegetables. Pour the sauce over everything.
- Stir constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy glaze.
- Remove from heat, garnish with green onions, and serve immediately over rice or noodles.

Slice beef against the grain for tenderness. Ensure the pan is very hot before adding oil to prevent steaming. Do not overcrowd the pan when searing beef; cook in batches if needed.
