  • 8 slices thick-cut bacon
  • 1/2 cup white vinegar
  • 1/4 cup chicken broth
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 cup celery, finely diced
  • 1/2 cup yellow onion, diced
  • 1/2 cup bacon bits or crispy fried onions (optional topping)
  • Salt and pepper to taste

Instructions

  1. Wash and scrub potatoes. Place in a large pot with cold water (covering by an inch) and a pinch of salt. Bring to a boil, then reduce to a simmer.
  2. Cook potatoes for 15-20 minutes until tender but holding shape. Drain in a colander and let cool for 10 minutes until warm.
  3. While potatoes cook, fry bacon in a skillet over medium heat until crisp (8-10 minutes). Remove bacon, drain on paper towels, and crumble into chunks. Reserve 1 tablespoon of bacon grease in the skillet.
  4. In the skillet with reserved bacon grease, sauté celery and onion for 3-4 minutes until softened. Add vinegar and broth, simmer for 1 minute.
  5. Remove skillet from heat. Whisk in mayonnaise, Dijon mustard, salt, and pepper to create the dressing.
  6. Place warm potatoes in a large mixing bowl. Pour the hot dressing over the potatoes and gently toss to coat.
  7. Add crumbled bacon and mix again. Let sit at room temperature for 10 minutes to absorb flavors. Serve warm or chilled.

Notes

Do not skip the warm toss; adding dressing to warm potatoes allows the starch to absorb the flavor. Use bacon grease for best flavor. If using red potatoes, let them cool completely before adding dressing to prevent mushiness. This salad does not freeze well.
