A quick, 5-minute no-bake snack made with pantry staples like oats, peanut butter, and honey. These chewy bars are perfect for school lunches, afternoon pick-me-ups, and busy parents.

- 3 cups old-fashioned rolled oats
- 1 cup creamy peanut butter
- 1/2 cup honey
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 1 cup dark chocolate chips (semi-sweet recommended)
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the parchment.
- In a small saucepan over low heat, combine the butter, honey, and vanilla extract. Stir constantly until the butter is melted and the mixture is smooth. Do not let it boil.
- Remove the saucepan from heat and stir in the peanut butter until fully combined and glossy.
- Place the rolled oats in a large mixing bowl. Pour the warm peanut butter mixture over the oats.
- Add the salt and chocolate chips (or other add-ins). Fold everything together with a silicone spatula until every oat is coated.
- Transfer the mixture to the prepared pan. Press down firmly and tightly with the bottom of a measuring cup or greased hands to create an even layer about 3/4 inch thick.
- Refrigerate for at least 2 hours, or overnight, until the bars are set and firm.
- Lift the block out of the pan using the parchment sling. Cut into 12 bars using a sharp knife. If the knife sticks, dip it in hot water between cuts.
- Wrap individually in wax paper or plastic wrap for storage.
Notes
Do not use instant oats or steel-cut oats as they will alter the texture. Press the mixture firmly into the pan to prevent crumbly bars. Chill completely before cutting for clean edges. Can be stored in the fridge for up to 2 weeks or frozen for up to 3 months.
