Description

A juicy, tender meatloaf made with a mix of beef and pork, featuring a sticky brown sugar glaze. This recipe stays moist thanks to a milk-soaked breadcrumb panade and is ready in under an hour.

  • 1 lb (450g) 80/20 ground beef
  • ½ lb (225g) ground pork
  • ½ cup (120ml) whole milk
  • ¾ cup (75g) Panko breadcrumbs
  • 1 medium onion, finely diced
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup (50g) dark brown sugar
  • ¼ cup (60g) ketchup
  • 1 tbsp (15ml) Worcestershire sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine milk and Panko breadcrumbs. Let sit for 5 minutes to form a panade.
  3. Heat butter in a skillet over medium heat. Sauté diced onion for 3-4 minutes until soft. Add garlic in the last 30 seconds. Cool slightly.
  4. Add ground beef, ground pork, cooled onion mixture, eggs, salt, and pepper to the breadcrumb bowl. Mix gently with hands until just combined. Do not overmix.
  5. Transfer mixture to a 9×5 inch loaf pan. Press gently to fill corners but do not pack tight.
  6. Bake for 45 minutes.
  7. While baking, whisk together brown sugar, ketchup, Worcestershire sauce, and a pinch of pepper. Microwave for 30 seconds to dissolve sugar.
  8. Remove loaf from oven. Pour off excess liquid/fat from the pan.
  9. Brush half of the glaze over the top of the meatloaf.
  10. Return to oven and bake for 15 more minutes, or until internal temperature reaches 160°F (71°C).
  11. Remove from oven and let rest in the pan for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a tough texture. Use a thermometer to ensure the internal temperature reaches 160°F. Drain excess fat from the pan before glazing to prevent sogginess. Let the meatloaf rest for 10 minutes to redistribute juices.
