  • 1.5 lbs (680g) cod fillets
  • 2 medium lemons (one for marinade, one for serving)
  • 4 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Kosher salt and coarse black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted
  • 1 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat cod fillets completely dry with paper towels.
  3. In a small bowl, whisk together olive oil, juice and zest of one lemon, minced garlic, dried oregano, dried thyme, red pepper flakes, salt, and black pepper.
  4. Spread sliced red onion and halved cherry tomatoes in the bottom of a 9×13 inch baking dish. Scatter kalamata olives over the vegetables.
  5. Place cod fillets in a single layer on top of the vegetables.
  6. Pour the marinade evenly over the fish and vegetables.
  7. Bake for 15-18 minutes until the fish flakes easily with a fork and is opaque throughout.
  8. Remove from oven and sprinkle crumbled feta cheese over the fish and vegetables.
  9. Broil for 1-2 minutes until feta is slightly melted and golden. Watch closely to prevent burning.
  10. Garnish with fresh chopped parsley and serve immediately with lemon wedges.

Notes

Pat the fish dry before marinating to ensure it bakes rather than steams. Do not overcrowd the baking dish; use two dishes if necessary. For best results, let the fish rest for 2 minutes after baking. Leftovers can be stored in the refrigerator for up to 3 days.
