Marry Me Chicken for Two: Easy No Leftovers

  • Author: Liliana
  • Total Time: 25 minutes
  • Yield: 2 servings 1x

Description

A scaled-down, creamy chicken recipe featuring sun-dried tomatoes and parmesan that cooks in just 25 minutes. Designed for two servings with zero leftovers, this one-skillet meal offers rich, concentrated flavor without the fuss.

Ingredients

Scale
  • 2 medium boneless, skinless chicken breasts (68 oz each)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1/2 cup heavy cream
  • 1/3 cup freshly grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. Pound to uniform thickness if necessary.
  2. Heat a 10-inch skillet over medium-high heat with 1 tablespoon of butter. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken to a plate.
  3. Reduce heat to medium. Add remaining 1 tablespoon of butter to the pan. Add garlic and red pepper flakes, stirring for 1 minute until fragrant.
  4. Add sun-dried tomatoes and sauté for 1 minute. Pour in heavy cream and sprinkle with Italian seasoning, scraping up browned bits from the pan.
  5. Simmer sauce for 2 minutes until it begins to thicken.
  6. Reduce heat to low and stir in parmesan cheese until melted and smooth. Taste and adjust seasoning.
  7. Return chicken to the skillet, nestling it into the sauce. Warm through for 1 minute.
  8. Garnish with fresh basil or parsley and serve immediately.

Notes

Use fresh garlic and freshly grated parmesan for best results. Do not overcrowd the pan to ensure proper searing. If the sauce is too thin, simmer longer; if too thick, add a splash of broth or milk. This recipe is naturally gluten-free but check ingredient labels. Do not freeze as the dairy sauce may separate.
