- 12 large eggs
- 2 cups shredded cheddar cheese
- 16 small flour tortillas (6-inch diameter)
- 1 lb breakfast sausage (cooked and crumbled)
- 1 cup diced bell peppers and onions (combined)
- 1 tsp salt
- 1/2 tsp black pepper
- Oil or butter for cooking
Instructions
- Heat a large skillet over medium heat. Sauté diced bell peppers and onions for 3-4 minutes until softened. Add breakfast sausage and cook until browned. Drain excess grease and set aside to cool.
- In a large mixing bowl, whisk 12 eggs with salt and pepper. Fold in the shredded cheddar cheese and the cooked vegetable/meat mixture gently.
- Wipe out the skillet and return to medium-low heat. Add butter or oil. Pour in one-third of the egg mixture and cook slowly, stirring gently to create soft curds. Remove to a clean bowl. Repeat with the remaining mixture and combine all eggs.
- Lay out a tortilla. Place about 1/3 cup of the egg mixture in the center. Fold the bottom up, fold in the sides, and roll tightly. Place seam-side down on a parchment-lined baking sheet.
- Place the baking sheet in the freezer for at least 30 minutes to flash freeze the burritos solid.
- Transfer frozen burritos to gallon-size freezer bags, squeezing out excess air. Label with date and contents. Store in freezer for up to 3 months.
- To reheat, microwave on 50% power for 1-2 minutes (wrapped in a damp paper towel) or bake at 350°F for 15-20 minutes until heated through.
Notes
Do not skip the flash freeze step to prevent burritos from sticking together. Ensure vegetables and sausage are cooled before assembling to prevent condensation. Use flour tortillas, not corn, as corn becomes brittle when frozen. Drain grease from sausage thoroughly to avoid soggy burritos.
