Description

These affordable, make-ahead breakfast sliders are the perfect solution for feeding a crowd at tailgates or brunches. By assembling them the night before and baking them in the morning, you get hot, fluffy, cheesy sliders with zero morning-of stress.


Ingredients

  • 24 egg buns (King’s Hawaiian or similar)
  • 12 large eggs
  • 1 lb breakfast sausage (pork or turkey)
  • 1 lb bacon or ham (chopped)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup butter, melted
  • 1/4 cup brown sugar
  • 2 tbsp poppy seeds
  • Salt and pepper to taste

Instructions

  1. Cook the sausage in a skillet over medium-high heat until browned and crumbled. Drain on paper towels. Cook bacon until crisp and crumble, or chop ham. Let all meats cool completely to room temperature.
  2. Whisk eggs with salt and pepper. Scramble in the same skillet over medium-low heat until slightly wet but fluffy. Remove from heat.
  3. Split egg buns in half horizontally. Place bottom halves in two greased 9×13 baking pans.
  4. Layer the sliders: sprinkle cheese on bottom buns, add scrambled eggs, then meat, then top with more cheese. Place top bun halves on and press down gently.
  5. Mix melted butter, brown sugar, and poppy seeds. Brush this glaze generously over the top of all sliders.
  6. Cover pans tightly with plastic wrap and refrigerate overnight (8-12 hours).
  7. Preheat oven to 350°F (175°C). Remove plastic wrap and bake for 25-30 minutes until tops are golden brown and cheese is bubbly.
  8. Let rest for 5 minutes before separating and serving.

Notes

Ensure meat is completely cool before assembling to prevent soggy buns. Egg buns are preferred over hamburger buns for texture. Can be frozen unbaked or baked; reheat from frozen adding 10-15 minutes to cook time.
