  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups broccoli florets (optional)
  • 1 cup cherry tomatoes (optional)
  • 1 bunch asparagus, trimmed (optional)
  • 1 red bell pepper, sliced (optional)
  • 1 tablespoon olive oil or avocado oil

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  2. In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, garlic powder, and onion powder until smooth.
  3. Chop vegetables and toss with oil, salt, and pepper.
  4. Arrange chicken thighs on a large sheet pan lined with parchment paper. Add vegetables to the sides or underneath.
  5. Pour half of the honey mustard sauce over the chicken and toss to coat evenly. Reserve the rest for basting.
  6. Roast for 15 minutes. Remove pan, flip chicken, and baste with sauce from the bottom of the pan.
  7. Return to oven and roast for another 10-15 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and edges are crispy.
  8. Let rest for 5 minutes before serving. Drizzle with remaining sauce if desired.

Notes

Do not crowd the pan to ensure proper roasting and caramelization. Patting the chicken dry is crucial for browning. Chicken thighs can be cooked up to 175°F for extra tenderness. This recipe does not freeze well, but the sauce can be frozen separately for up to 3 months.
