Description
A quick and easy weeknight dinner featuring shrimp and vegetables threaded onto skewers, marinated in a garlic-lemon butter mixture, and grilled to perfection in just 15 minutes.

- 2 pounds (900g) large shrimp (26–30 count), frozen, tail-off, deveined, thawed and patted dry
- 1 medium yellow onion, cut into 1-inch chunks
- 1 large red bell pepper, cut into 1-inch chunks
- 1 large green bell pepper, cut into 1-inch chunks
- 4 tablespoons (60g) unsalted butter, melted
- 2 tablespoons (30ml) extra virgin olive oil
- 6 cloves garlic, minced
- 3 tablespoons (45ml) fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- 10–12 bamboo skewers, soaked in water for 30 minutes
Instructions
- Soak bamboo skewers in water for at least 30 minutes to prevent burning.
- Thaw frozen shrimp in a colander under cold running water for 10-15 minutes. Pat them completely dry with paper towels.
- In a medium bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, lemon zest, oregano, red pepper flakes, salt, and black pepper.
- Add the dried shrimp to the marinade and toss gently to coat. Let sit for 5-10 minutes.
- Cut the onion and bell peppers into 1-inch chunks.
- Thread the shrimp and vegetables onto the skewers in an alternating pattern, leaving space between items.
- Preheat grill to medium-high heat (400°F / 200°C) and lightly oil the grates.
- Grill skewers for 2-3 minutes per side, rotating every 2 minutes, until shrimp are opaque and pink (total time 8-10 minutes).
- Remove from grill and serve immediately, optionally drizzling with extra melted butter or sprinkling with fresh parsley.
Notes
Do not overcook shrimp; they are done when they form a loose ‘C’ shape. A tight ‘O’ indicates overcooking. Ensure shrimp are very dry before grilling to prevent steaming. Soak bamboo skewers to prevent burning. Marinate shrimp for no longer than 20 minutes to avoid mushy texture.
