Description
A simple, therapeutic salad featuring warm, caramelized peaches and cool, creamy burrata over peppery arugula. Designed as a low-effort, high-reward meal for moments when you need to slow down and nourish yourself.
Ingredients
- 4 medium ripe peaches (approx. 600g), halved and pitted
- 1 ball fresh burrata cheese (approx. 200g)
- 4 cups arugula (approx. 60g)
- 1/2 cup fresh basil leaves, torn
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze
- 1 tsp flaky sea salt
- 1/2 tsp freshly cracked black pepper
Instructions
- Wash peaches thoroughly, cut in half, and remove pits.
- Heat a grill or grill pan to medium-high heat.
- Lightly brush the cut sides of the peaches with olive oil.
- Place peaches cut-side down on the hot surface and cook for 2-3 minutes without moving to create char marks.
- Flip peaches and cook for another 1-2 minutes until warm and slightly softened.
- Remove peaches from heat and let cool for a minute.
- Arrange arugula in a wide, shallow serving bowl as a fluffy mound.
- Scatter torn basil leaves over the arugula.
- Place the warm peach halves or wedges on top of the greens.
- Pat the burrata ball dry gently and place it in the center of the salad. Do not cut until ready to eat.
- Drizzle with extra virgin olive oil and balsamic glaze.
- Sprinkle with flaky sea salt and freshly cracked black pepper.
- Garnish with additional basil leaves if desired and serve immediately.
Notes
Ensure peaches are ripe but firm enough to hold their shape on the grill. Keep burrata refrigerated until the last minute to maintain the temperature contrast. This salad is best eaten immediately; do not store assembled as greens will wilt and burrata will separate. For a dairy-free version, substitute burrata with vegan alternatives or cashew cream.
