- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons packed brown sugar
- 2 tablespoons freshly squeezed lime juice
- 4 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon red curry paste
- 1/2 cup creamy peanut butter
- 1/2 cup full-fat canned coconut milk
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon Sriracha
- 2–4 tablespoons water
- Bamboo skewers, soaked in water
Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a large mixing bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and red curry paste until the sugar is dissolved.
- Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Thread the marinated chicken onto the skewers, leaving space between cubes for even cooking.
- In a small saucepan over low heat, combine peanut butter, coconut milk, lime juice, soy sauce, maple syrup, and Sriracha. Whisk until smooth and creamy. Add water gradually to reach desired consistency.
- Preheat grill to medium-high heat (400°F/200°C) and oil the grates.
- Grill skewers for 4-5 minutes per side, flipping once, until internal temperature reaches 165°F (74°C).
- Serve skewers drizzled with peanut satay sauce, garnished with roasted peanuts and cilantro.
Notes
Chicken thighs are recommended over breast meat to prevent drying out. If using leftover marinade as a sauce, boil it for 2 minutes first to kill bacteria. For a vegetarian version, substitute chicken with extra-firm tofu.
