Description

A comforting, one-pot white chicken chili made with tender chicken thighs, white beans, green chilies, and heavy cream. This recipe offers rich flavor without being heavy, making it perfect for cold evenings.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 large yellow onion, diced (approx. 2 cups)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 can (4 oz / 113g) mild diced green chilies, with juice
  • 2 cans (15 oz / 425g each) cannellini or Great Northern beans, rinsed
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Pat chicken thighs dry and season generously with salt and pepper.
  2. Heat olive oil in a 6-quart Dutch oven over medium heat. Add diced onion and cook for 5-7 minutes until translucent and soft.
  3. Add minced garlic and cook for 1 minute, stirring constantly.
  4. Add chicken chunks in a single layer and brown for 2-3 minutes on each side. Remove chicken to a plate.
  5. Return chicken to the pot. Add beans, green chilies (with juice), cumin, oregano, and cayenne. Stir to coat.
  6. Pour in chicken broth, scraping up browned bits from the bottom. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  7. Remove lid and stir in heavy cream. Simmer gently for 2-3 minutes. Do not boil.
  8. Taste and adjust seasoning with salt, pepper, or additional cayenne. Serve hot.

Notes

For a thicker chili, mash half the beans against the side of the pot before adding cream. Add a splash of lime juice or apple cider vinegar before serving to brighten the flavors. If freezing, omit the cream until reheating to prevent separation.
