  • 2 medium sweet potatoes (approx. 1.2 lbs), diced into 1/2-inch cubes
  • 2 medium Granny Smith apples (approx. 1 lb), cored and diced
  • 3 cloves garlic, minced
  • 1/3 cup honey
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Dice sweet potatoes and apples into 1/2-inch cubes. Pat chicken thighs dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large 12-inch skillet over medium-high heat. Place chicken thighs skin-side down and sear for 4-5 minutes until golden and crispy. Flip and cook for another 3-4 minutes. Remove chicken to a plate.
  3. Reduce heat to medium. Add diced sweet potatoes to the same pan. Cook for 8-10 minutes, stirring occasionally, until softened and browned. If dry, add 2 tbsp water and cover for 2 minutes to steam.
  4. Add diced apples to the pan with the sweet potatoes. Sprinkle in minced garlic and thyme. Cook for 2-3 minutes until garlic is fragrant.
  5. Return chicken to the pan, nesting it into the vegetables. Pour honey over everything and baste the chicken. Cover and simmer for 3-4 minutes until chicken reaches 165°F and honey thickens into a glaze.
  6. Let the skillet rest for 5 minutes before serving to allow flavors to meld and sauce to thicken.

Notes

Do not crowd the pan to ensure proper searing. Use firm, tart apples like Granny Smith to prevent mushiness. Let the dish rest for 5 minutes after cooking. Store leftovers in the refrigerator for up to 4 days. Reheat in a skillet with a splash of water to maintain texture.
