Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the long sides for easy removal.
  2. In a large mixing bowl, melt the butter (microwave in 30-second bursts). Let it cool slightly so it doesn’t cook the eggs.
  3. Add the granulated sugar, brown sugar, and eggs to the melted butter. Whisk vigorously for 2-3 minutes until the mixture is pale, glossy, and slightly thickened. This step is crucial for the crackly top.
