  • 1.5 lbs Yukon Gold Potatoes, cut into 1-inch cubes
  • 4 cloves Fresh Garlic, minced
  • 1 tbsp Fresh Parsley, chopped
  • 3 tbsp Unsalted Butter
  • 2 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Cut steak and potatoes into 1-inch cubes. Pat both completely dry with paper towels to ensure a good sear.
  2. Season the steak cubes generously with salt, pepper, and smoked paprika. Set aside.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and 1 tablespoon olive oil.
  4. Add potato cubes in a single layer (cook in batches if necessary to avoid crowding). Cook for 4-5 minutes without touching to develop a crust, then flip and cook for another 5-6 minutes until fork-tender and crispy. Remove potatoes and set aside.
  5. Increase heat to high. Add remaining 1 tablespoon olive oil to the pan.
  6. Add steak cubes in a single layer. Sear for 2-3 minutes on the first side without moving, then flip and sear for another 2-3 minutes (total 6-8 minutes for medium-rare). Remove steak and let rest.
  7. Reduce heat to medium-low. Add remaining 2 tablespoons butter to the pan. Let melt and bubble.
  8. Add minced garlic and stir constantly for 30-60 seconds until fragrant and lightly golden. Do not let it burn.
  9. Return potatoes and steak to the pan. Toss gently to coat in the garlic butter sauce.
  10. Sprinkle with fresh parsley, taste for seasoning, and serve immediately.

Notes

Do not crowd the pan, as this causes steaming instead of searing. Always pat meat and potatoes dry before cooking. Add garlic at the very end to prevent burning. Let the steak rest before combining with potatoes to retain juices. For dairy-free, swap butter for olive oil or plant-based butter.
