Description
These double chocolate chunk cookies feature crisp edges, a soft fudgy center, and pools of melted high-quality chocolate. Made with simple pantry staples and a crucial chilling step for the perfect texture.
Ingredients
Scale
- 2 ¼ cups (280g) All-Purpose Flour
- ¾ cup (65g) Unsweetened Cocoa Powder (natural)
- 1 teaspoon Baking Soda
- 1 teaspoon Salt (fine sea salt or table salt)
- 1 cup (2 sticks / 226g) Unsalted Butter, room temperature
- 1 ½ cups (300g) Brown Sugar, packed
- ½ cup (100g) Granulated Sugar
- 2 large Eggs, room temperature
- 2 teaspoons Vanilla Extract
- 12 oz (340g) Semi-Sweet Chocolate Bars, chopped into chunks
- Sea Salt Flakes (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Scrape down the sides of the bowl.
- Reduce mixer speed to low. Gradually add the dry ingredients to the wet ingredients. Mix just until the flour disappears.
- Switch to a wooden spoon or spatula and fold in the chopped chocolate chunks. Reserve a few chunks for topping.
- Cover the bowl and chill the dough in the refrigerator for at least 30 minutes (ideally 24 hours for maximum fudginess).
- Scoop dough into 2-tablespoon balls and place on baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until edges are set and crisp but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Sprinkle with sea salt flakes if desired.
Notes
Chilling the dough is crucial to prevent spreading and ensure a fudgy texture. Do not overbake; cookies will firm up as they cool. For best results, use natural cocoa powder and high-quality chocolate bars chopped into irregular chunks. Store in an airtight container with a slice of bread to maintain softness.
