  • 1/2 cup cornstarch
  • 1/2 cup honey
  • 1/3 cup Sriracha sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar (optional)
  • 2 stalks green onions, sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. Pat chicken cubes completely dry with paper towels and place in a large bowl.
  2. Sprinkle cornstarch over the chicken and toss gently until every piece is coated in a thin, white dusting.
  3. In a small bowl, whisk together honey, Sriracha, minced garlic, grated ginger, soy sauce, and rice vinegar until smooth.
  4. Heat vegetable oil in a large skillet over medium-high heat until a pinch of cornstarch sizzles.
  5. Add chicken in a single layer without crowding the pan. Cook undisturbed for 3 minutes to form a crust.
  6. Flip chicken pieces and cook for another 2-3 minutes until golden brown and internal temperature reaches 165°F (74°C). Remove chicken from pan.
  7. Reduce heat to medium. Pour sauce mixture into the hot pan and stir constantly for 30 seconds until glossy.
  8. Return chicken to the pan and toss to coat evenly in the sauce. Remove from heat immediately.
  9. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

Ensure chicken is dry before coating in cornstarch to prevent steaming. Do not crowd the pan to maintain crispiness. The coating will soften in the fridge; reheat in a skillet or air fryer to restore crunch. Do not freeze as the texture becomes mealy.
