- 2 large boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4–5 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Pat chicken breasts dry and season both sides with salt, pepper, Italian seasoning, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and tent with foil.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and chicken broth. Stir to scrape up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until slightly thickened.
- Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Add spinach and stir until just wilted.
- Slice chicken and return to the skillet, spooning sauce over the top. Garnish with red pepper flakes if desired.
- Serve immediately over pasta, rice, or with crusty bread.
Notes
Pound chicken breasts to even thickness for uniform cooking. Use fresh Parmesan rather than pre-grated to prevent a grainy sauce. Remove pan from heat before adding cheese to ensure smooth melting. If serving over pasta, reserve starchy pasta water to adjust sauce consistency.
