  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and tent with foil.
  3. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in heavy cream and chicken broth. Stir to scrape up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until slightly thickened.
  5. Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Add spinach and stir until just wilted.
  6. Slice chicken and return to the skillet, spooning sauce over the top. Garnish with red pepper flakes if desired.
  7. Serve immediately over pasta, rice, or with crusty bread.

Notes

Pound chicken breasts to even thickness for uniform cooking. Use fresh Parmesan rather than pre-grated to prevent a grainy sauce. Remove pan from heat before adding cheese to ensure smooth melting. If serving over pasta, reserve starchy pasta water to adjust sauce consistency.
