Description
A quick and comforting weeknight dinner featuring tender chicken breasts in a rich, garlicky Parmesan cream sauce, ready in just 30 minutes.
Ingredients
Scale
- 2 large boneless, skinless chicken breasts (approx. 1.5 lbs)
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese (Parmigiano-Reggiano)
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- Optional: 1/2 tsp red pepper flakes
Instructions
- Pat chicken breasts dry and pound to an even 1/2-inch thickness. Season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and internal temperature reaches 165°F. Remove chicken to a plate and tent with foil.
- Reduce heat to medium. Add remaining 1 tablespoon of butter to the pan. Once melted, add minced garlic and sauté for 1 minute until fragrant, being careful not to burn.
- Pour in heavy cream, scraping up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until the sauce slightly thickens.
- Reduce heat to low. Gradually whisk in grated Parmesan cheese until melted and smooth.
- Return chicken and any accumulated juices to the pan. Spoon sauce over chicken and heat through for 1 minute. Taste and adjust seasoning if needed.
Notes
Pound chicken to even thickness for uniform cooking. Use freshly grated Parmesan to prevent grainy sauce. Keep heat low when adding cheese to prevent splitting. Do not freeze leftovers as dairy may separate.
