Description

A high-protein, creamy buffalo chicken dip made with rotisserie chicken, Greek yogurt, and blue cheese. It’s a gluten-free, low-carb appetizer that is easy to make in a slow cooker or oven.

  • 3 cups shredded rotisserie chicken (or 1.5 lbs boneless, skinless breasts, cooked and shredded)
  • 8 oz block cream cheese, softened to room temperature
  • 1/2 to 3/4 cup Frank’s RedHot sauce (or buffalo wing sauce)
  • 1/2 cup plain Greek yogurt (full-fat recommended)
  • 1/2 cup blue cheese crumbles
  • 1 tsp garlic powder
  • 2 tbsp unsalted butter, melted

Instructions

  1. Prep the chicken: Shred rotisserie chicken into bite-sized pieces. If using raw chicken, boil or bake until 165°F, cool, and shred. Pat dry to remove excess moisture.
  2. Soften the cream cheese: In a large mixing bowl, combine softened cream cheese, Greek yogurt, melted butter, and garlic powder. Mix with a hand mixer or fork until smooth and lump-free.
  3. Combine the base: Stir in 1/2 cup of hot sauce and 1/2 cup of blue cheese crumbles into the cream cheese mixture. Taste and add more hot sauce if desired.
  4. Add chicken and transfer: Fold in the shredded chicken until coated. Transfer the mixture to a slow cooker, spread evenly, and top with remaining blue cheese crumbles.
  5. Heat and serve: Cover and cook on Low for 30-45 minutes, stirring once halfway through, until hot and bubbly. Keep on Warm mode until serving. Stir before serving.

Notes

Do not use tub cream cheese as it contains too much moisture. Ensure cream cheese is fully softened to avoid lumps. If the dip is too thin, cook longer or add cornstarch slurry. If too spicy, add more cream cheese or sour cream. This dip does not freeze well due to dairy separation.
