  • 1/4 cup (60g) 100% pure pumpkin puree
  • 1 cup plant-based milk (full-fat coconut milk or oat milk recommended)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp nutmeg
  • 12 tbsp pure maple syrup
  • 1/2 tsp pure vanilla extract
  • Dairy-free whipped cream (optional, for topping)

Instructions

  1. Brew 1 cup of strong coffee using your preferred method (drip, pour-over, or French press). Keep the mug warm.
  2. In a small saucepan, combine the pumpkin puree, plant-based milk, cinnamon, ginger, nutmeg, maple syrup, and vanilla extract.
  3. Whisk ingredients together over medium heat until steaming hot but not boiling (about 3-4 minutes). Stir frequently to prevent sticking.
  4. Remove from heat and froth the milk mixture using a handheld frother or by shaking vigorously in a jar until airy and foamy.
  5. Pour the hot coffee into a mug, filling it halfway.
  6. Slowly pour the frothed pumpkin spice milk over the coffee, holding back the foam with a spoon.
  7. Spoon the thick foam on top.
  8. Garnish with a dollop of dairy-free whipped cream and a pinch of cinnamon or nutmeg. Serve immediately.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Whisk the pumpkin puree into the cold milk first to prevent lumps. Control sweetness by tasting the milk mixture before frothing. The pumpkin spice milk mixture can be stored in the fridge for up to 3 days, but the coffee should be brewed fresh.
