Instructions

  1. Brown the butter: Melt butter in a heavy-bottomed saucepan over medium heat. Stir constantly until milk solids turn golden and the scent is nutty (about 10 minutes). Pour into a heat-proof bowl and cool until just warm.
  2. Cream the sugars and butter: In a mixing bowl, combine cooled brown butter, granulated sugar, and brown sugar. Whisk vigorously for 2-3 minutes until pale and fluffy.
  3. Add wet ingredients: Beat in eggs one at a time, then mix in pumpkin puree until combined.
  4. Mix dry ingredients: In a separate bowl, whisk together flour, cream of tartar, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture and mix until just combined.
  5. Chill the dough: Cover and refrigerate dough for at least 1 hour to solidify fats and meld flavors.
