Instructions
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and 1 ½ cups of granulated sugar on medium-high speed until light and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Scrape down the sides of the bowl.
- Gradually add the dry ingredients to the wet mixture on low speed until just combined. Do not overmix.
- In a small bowl, mix the remaining ½ cup sugar with 2 tablespoons cinnamon for the coating.
- Scoop dough into 1 ½-inch balls. Roll each ball in the cinnamon-sugar mixture until fully coated.
- Place dough balls on prepared baking sheets, spacing them 2 inches apart.
- Bake for 9-11 minutes until edges are set and lightly golden, but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Ensure butter is softened, not melted, to prevent spreading. Do not overbake; centers should look slightly underdone as they firm up while cooling. For extra crunch, roll dough balls in cinnamon sugar twice. Store in an airtight container with a piece of bread to maintain softness.
