Instructions

  1. Brown the butter: Melt butter in a saucepan over medium heat, stirring constantly until it turns golden amber and smells nutty (about 10 minutes). Pour into a heat-proof bowl and cool until just warm.
  2. Mix wet ingredients: In a large bowl, whisk the cooled brown butter, brown sugar, and white sugar vigorously for 2 minutes until smooth and glossy. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  3. Combine dry ingredients: In a separate medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, and nutmeg.
