Chewy Brown Butter Chocolate Chip Cookies

  • Author: Liliana

  • Yield: 24 cookies 1x

Description

These cookies feature crisp edges and a soft, chewy center with deep, nutty flavors from browned butter. The secret to their bakery-quality texture is resting the dough for 24 hours.

Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • 1 ½ cups (300g) dark brown sugar
  • ½ cup (100g) granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 cups (340g) chocolate chips (mix of semi-sweet and milk chocolate)
  • Flaky sea salt (for topping, optional)

Instructions

  1. Brown the butter: Melt unsalted butter in a heavy-bottomed saucepan over medium heat. Stir frequently until it turns deep amber and smells nutty (about 5 minutes). Remove from heat and pour into a heatproof bowl. Let cool for 10 minutes until just warm.
  2. Mix wet ingredients: Whisk brown sugar and granulated sugar into the warm brown butter for 2 minutes. Add the whole egg, egg yolk, and vanilla extract. Whisk until smooth and glossy.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and kosher salt.
  4. Form the dough: Fold dry ingredients into the wet mixture until no streaks remain. Fold in chocolate chips. Cover and refrigerate for at least 24 hours for best flavor and texture.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Scoop dough into 2-tablespoon balls and place on baking sheets, leaving 2 inches between them.
  7. Bake for 12-14 minutes until edges are golden brown but centers look slightly underdone.
  8. Immediately sprinkle with flaky sea salt if using. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

The key to this recipe is resting the dough for 24 hours to allow flour hydration and flavor development. Ensure brown butter is cooled before mixing to prevent melting the chocolate. Do not overbake; cookies continue to cook on the hot pan. For gluten-free version, use a 1:1 gluten-free flour blend with xanthan gum.
