Description

A creamy, comforting weeknight dinner that uses up leftovers like rotisserie chicken and wilted broccoli. This one-dish casserole is kid-approved, freezer-friendly, and easy to customize.


Ingredients

  • 3 cups cooked and shredded chicken (about 450g)
  • 1 ½ cups uncooked long-grain white rice (about 300g)
  • 2 cups chopped broccoli florets (about 200g)
  • 2 cups chicken broth (480ml)
  • 1 can (10.5 oz / 300g) condensed cream of chicken soup
  • ½ cup sour cream (120g)
  • ½ cup whole milk (120ml)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • Optional: Crispy bacon bits, canned mushrooms, or jalapeños

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, whisk together the condensed cream of chicken soup, sour cream, milk, minced garlic, diced onion, dried parsley, paprika, salt, and black pepper until smooth.
  3. Stir in the uncooked rice, shredded chicken, and chopped broccoli. Mix until all ingredients are evenly coated in the sauce.
  4. Pour the mixture into the prepared baking dish and spread it out evenly. Press down gently with a spoon.
  5. Sprinkle half of the shredded cheddar cheese evenly over the top.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil, sprinkle the remaining cheese on top, and bake for another 15-20 minutes, or until the rice is tender, the cheese is bubbly and golden, and the edges are slightly crispy.
  8. Let the casserole rest for 5-10 minutes before serving to allow the sauce to thicken.

Notes

Shred your own cheese for better melting. If using brown rice, increase liquid to 2 ½ cups and baking time to 50-60 minutes. Let the casserole rest before serving to prevent it from being runny. Can be assembled up to 24 hours in advance and refrigerated.
