- 6 oz (170g) pre-smoked pork chops or shoulder slices
- 3 tbsp (45ml) thick, molasses-based barbecue sauce
- 1 large hamburger bun or 2 small slider rolls
- 1/4 medium yellow onion, finely diced
- 1 tsp (5g) butter
- 1/4 cup (30g) coleslaw mix (optional)
Instructions
- Shred the pre-smoked pork using a fork and place it in a small skillet over medium-low heat.
- Add a tiny splash of oil or water and the diced onion to the skillet. Cook gently for 2-3 minutes until the onion is soft and translucent.
- Pour the BBQ sauce over the pork and onion mixture. Simmer gently for 1-2 minutes, stirring until the sauce coats the meat and thickens slightly.
- Split the bun and toast it in a toaster or under the broiler with butter on the cut sides until golden brown.
- Place the warm pork mixture onto the bottom half of the toasted bun. Top with coleslaw if using, cover with the top bun, and serve immediately.
Notes
Pre-smoked pork is already cooked, so you are just heating it through to avoid drying it out. Toasting the bun is crucial to prevent sogginess. If the pork is too salty, rinse it under cold water before heating. This recipe can be scaled up for multiple servings.
