Description

A cheap, no-cook breakfast made with rolled oats, peanut butter, and banana that keeps you full until lunch for under $2 per serving.


Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (1%, 2%, or almond milk)
  • 2 tbsp peanut butter
  • 1 small ripe banana (or 1/2 banana per serving)
  • 1 tbsp chia seeds (optional)
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Peel and mash the banana with a fork until smooth.
  2. In a mason jar or glass container, combine the rolled oats, chia seeds, cinnamon, and salt. Stir to mix.
  3. Pour in the milk and add the peanut butter and mashed banana.
  4. Stir vigorously until the peanut butter is broken up and the mixture looks uniform.
  5. Secure the lid and shake once or twice to settle the oats.
  6. Refrigerate for at least 4 hours, preferably overnight.
  7. Stir again before eating. Add a splash of milk if too thick.
  8. Serve cold directly from the jar.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. For best sweetness, use frozen bananas which break down cell walls and concentrate sugars. Can be batch-prepped for up to 5 days in the fridge. Do not freeze the finished oats as texture becomes grainy.
