Instructions

  1. Rinse the wild rice blend. In a medium saucepan, combine 1 cup rice with 2 cups chicken broth and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed. Fluff with a fork and set aside.
  2. In a large skillet or Dutch oven, melt 2 tablespoons of butter over medium heat. Add chopped onion (if using) and sauté for 2 minutes until soft. Add garlic powder and onion powder, cooking for 30 seconds until fragrant.
  3. Stir in 2 tablespoons of flour and cook for 1 minute to create a roux. Slowly pour in 2 cups of chicken broth while whisking vigorously to prevent lumps. Simmer for 2-3 minutes until thickened.
  4. Stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  5. Add the cooked rice, shredded rotisserie chicken, and frozen mixed vegetables to the skillet. Stir to combine. Season with salt and black pepper to taste.
  6. Preheat oven to 375°F (190°C). Pour the mixture into a small baking dish (6×6 or 7×7 inch). Sprinkle with extra cheese or breadcrumbs if desired.
  7. Bake for 15-20 minutes until the top is golden brown and edges are bubbling. Let rest for 5 minutes before serving.
