A quick, no-cook breakfast parfait packed with protein and fiber, featuring creamy Greek yogurt, sweet blueberries, and crunchy granola. Ready in just 5 minutes.

- 2 cups (450g) plain full-fat Greek yogurt
- 2–3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 scoop (30g) vanilla protein powder
- 1.5 cups (225g) fresh or frozen blueberries
- 1 cup (100g) granola with nuts and seeds
- 2 tablespoons chia seeds
- 1/4 cup chopped almonds or walnuts
Instructions
- In a medium bowl, combine Greek yogurt, vanilla extract, honey, and protein powder. Whisk vigorously until smooth and creamy. Add a splash of milk if too thick.
- If using frozen blueberries, let them thaw for 5-10 minutes or rinse briefly with warm water. Pat dry if wet. If using fresh, rinse and dry thoroughly.
- Chop nuts if large and break up any large clumps in the granola.
- In a jar or bowl, layer the yogurt mixture, blueberries, granola, and nuts. Repeat layers, finishing with a dollop of yogurt, fresh berries, and a drizzle of honey.
- Serve immediately for best texture, or store yogurt and berry layers in the fridge for up to 3 days, adding granola just before eating.
Notes
For meal prep, keep granola separate until serving to prevent sogginess. If yogurt is too thick, add a splash of milk. For a dairy-free version, use coconut yogurt and maple syrup. Toasting nuts enhances flavor.
