Description
A quick, one-dish weeknight dinner that combines seasoned ground beef, black beans, salsa, and tortillas baked with melted cheese. It offers restaurant-quality flavor with minimal cleanup and is kid-approved.

- 1.5 pounds ground beef (80/20 fat ratio)
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons taco seasoning (homemade or store-bought)
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup medium-chunk salsa
- 8 large flour tortillas
- 3 cups shredded Mexican cheese blend (cheddar and Monterey Jack)
- 1 cup shredded cheddar (optional)
- Optional add-ins: 1 cup corn, 2 tablespoons diced jalapeños, ½ cup sliced black olives, 2 sliced green onions
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Cook for 6-8 minutes until no pink remains. Drain grease, leaving a little for flavor.
- Add diced onion to the beef and cook for 2 minutes until soft. Add garlic and cook for 30 seconds until fragrant.
- In a large bowl, whisk together taco seasoning, tomato sauce, salsa, and drained black beans. Stir in the cooked beef mixture.
- Fold tortillas in half or quarters. Layer half the tortillas in the bottom of the baking dish. Pour half the beef mixture over the tortillas and sprinkle with half the cheese.
- Repeat with remaining tortillas, beef mixture, and cheese.
- Cover the dish with foil and bake for 15 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly and slightly browned.
- Let the casserole rest for 5 minutes before cutting and serving.
Notes
For best results, shred your own cheese to ensure smooth melting. Let the casserole rest for 5 minutes before cutting to allow layers to set. To make it gluten-free, use corn tortillas. To make it vegetarian, swap beef for black beans.
