Ingredients

  • 4 tablespoons unsalted butter
  • 2 medium lemons (one for juice, one for zest/slices)
  • 3 cloves garlic, minced
  • 2 tablespoons dry white wine (or chicken broth)
  • 1 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt (plus more for seasoning)
  • Cooking spray or oil for greasing pan

Instructions

  1. Preheat oven to 400°F (200°C). Line a 18×13 inch baking sheet with parchment paper or foil and lightly grease.
  2. Rinse salmon fillets and pat them completely dry with paper towels. Place fillets on the prepared baking sheet in a single layer.
  3. Season both sides of the salmon lightly with salt and black pepper. Sprinkle with dried dill if desired.
  4. In a microwave-safe bowl, combine melted butter, minced garlic, lemon zest, lemon juice, and white wine. Whisk until emulsified.
  5. Brush the lemon butter mixture generously over the top of each salmon fillet.
  6. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and is opaque throughout. The internal temperature should reach 145°F for well-done or 125-130°F for medium.
  7. Remove from oven and drizzle with any remaining sauce from the bowl. Serve immediately.

Notes

Pat the salmon dry before baking to ensure it bakes rather than steams. Do not overcook, as salmon continues to cook slightly after removal from the oven. For best texture, aim for medium-rare to medium (125-130°F). Leftovers can be stored in the fridge for up to 3 days or eaten cold over salad.
