Ingredients
Scale
- 1.5 lbs (680g) cod fillets
- 4 tablespoons (60g) unsalted butter, melted
- 2 tablespoons (30ml) fresh lemon juice
- 4 cloves garlic, minced
- Salt and black pepper to taste
- 1 cup (80g) Panko breadcrumbs
- ¼ cup (25g) grated Parmesan cheese
- 1 teaspoon dried parsley
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- Lemon wedges for serving
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9-inch baking dish or pie plate.
- Pat cod fillets dry with paper towels and place them in the prepared baking dish. Season both sides generously with salt and pepper.
- In a small bowl, whisk together the melted butter, lemon juice, and minced garlic. Pour this mixture evenly over the cod fillets.
- In a separate small bowl, combine Panko breadcrumbs, grated Parmesan, dried parsley, dried oregano, and red pepper flakes. Stir to distribute evenly.
- Sprinkle the breadcrumb mixture evenly over each fillet, pressing down gently to adhere.
- Bake for 10-12 minutes, or until the cod flakes easily with a fork and the topping is golden brown.
- Remove from oven and let rest for 2 minutes before garnishing with fresh parsley and serving with lemon wedges.
Notes
Patting the fish dry is crucial to prevent steaming. Use Panko breadcrumbs for the best crispiness. If using frozen cod, ensure it is completely thawed and dried. Do not overcook the fish, as it will become dry. For a dairy-free version, use olive oil instead of butter and skip the Parmesan or use nutritional yeast.
